BETTY CARROLL Betty Jean Horn Carroll, known as "Pete" by family and friends, passed away quietly Aug. 25, 2012, after a long battle with cancer. Betty was born in West Clifty, Grayson County, Ky., Nov. 3, 1930. She moved to Phoenix in 1959 with five young boys, Doug, Mike, Rick, Joe and Jim, to find a better climate for her youngest son, Jim. Betty met and married Henry "Red" Harrison Carroll and together they had a son, Gary. Betty took in ironing and worked as a barber to make ends meet until Red's machine shop, Sun Motor Exchange, could support the family of six boys. Betty loved to cook and keep an immaculate home and loved her boys unconditionally. Betty passed on many of her famous recipes like her buttermilk biscuits, all kinds of pies and chocolate gravy just to name a few. When Red passed away, Betty moved to Las Vegas, where she lived the last 15 years. While in Las Vegas, Betty spread her wings and enjoyed life and many activities. She went on three cruises, enjoyed Sushi and made many new friends. Some of Betty's favorite things to do were playing Keno, yoga and Jazzercise. She was very active and was awarded a Presidential Certificate for fitness which she was very proud of. She was a good bowler until her bursitis became too painful. Betty loved her many dogs over the years and took such great care of them, she would brush their teeth every day and take them to the dog park. Her most recent dog was "Red" who fathered 24 puppies which brought joy to many of Betty's friends. Past dogs included Brownie and Samson. Betty was preceded in death by her parents, Opie and Fonnie Horn of Big Clifty, Ky.; brothers, Murl Horn and Maurice Horn; and sister, Helen Skaggs, all of Leitchfield, Grayson County, Ky.; her husband, Red Carroll; her youngest son, Gary "Pee Wee" Carroll; and a granddaughter, Lorna Weedman. Betty is survived by many nieces and nephews in Kentucky; her sister's son, Pat Skaggs of Indiana; and five sons and their wives, Doug and Marsha Skaggs of Springfield, Mo., Mike and Dana Skaggs of Camp Verde, Ariz., Rick and Julie Skaggs of Richland, Wash., Joe and Brenda Skaggs of Las Vegas, and Jim and Cheryl Skaggs of Mesa, Ariz.; 12 grandchildren, Tanna, Fawn, Stacey, Michael, Missy, Dougie, Erinn, Clayton, Laura, Amy, Jimmy and Danny; and 15 great-grandchildren, Madison, Lillian, Max, Heidi, Samuel, Ryan, Grace, Brandon, Holly, Riley, Noah, Remy, Emma, Preston and Parker. Betty's final resting place will be next to Red and Gary at Green Acres Mortuary and Cemetery, 401 N. Hayden Road, Scottsdale, AZ 85257. Services will be 8:30-11 a.m. Tuesday, Sept. 4. Lunch will follow at Green Acres Banquet Room.
